Not sure if this is an appropriate story to share here, but, eh, what the heck! I am sure this will ring relevant to most of our lives :)
Do you remember a time in your life when you drank just to get drunk? College probably? Maybe some of you degenerates (JK, JK) in highschool? If you were like most American college students you also probably didn't have a lot of money so you relied on the grocery stores to stock no brand, no name "Vodka" or "Rum." Or you hit of Trader Joe's for some "Two Buck Chuck" wine in ambiguous red and white flavors. Or if you were having a "light" night of drinking, Natty Light or Keystone were the beers of choice.
Why am I bringing this up and making you residually queasy? Well, I think this is a shared experience among us, and for those of us that have continued to imbibe, I trust that our tastes have refined and our palates are more discerning (though maybe not). I personally cannot go anywhere near vodka, of any brand or lack thereof. Nor can I drink any sort of watered down beer-like or wine-like substitutes. I prefer drinks that actually have taste, that will still give me that warm buzzy feeling, and won't most definitely give me that cheap booze headache the next day even if all you did was look at the bottle. And, yes, I do realize I am getting older and hangovers are almost certainly inevitable at this point, at least I am not shooting disgusting neon colored liquor anymore.
Today's "cookie" is again not really a traditional cookie. Much like yesterday's twist thought these over some cookie-like qualities. Sweet, some texture, portability, and a special shot of tasty booze... not a cookie quality but a sometimes necessary holiday treat quality.
I don't really care of rum so instead of opting for a traditional rum ball, I went with my other brown liquor friend, bourbon. These guys are also chock full of ground pistachio, vanilla wafers, a little honey (because naturally that goes with the bourb), and a dash of cocoa powder to round out the flavors. I think these are sure to please the over-21/ fake ID crowd.
The Recipe: Bourbon Balls
yields ~12-14 balls
The Bits and Bobs:
1 1/4 cups vanilla wafers, crushed (I counted out about 32-33 cookies)
1/2 cup pistachio meal/flour (can sub any other nut meal, or ground nut)
1/2 cup powdered sugar
1 tbsp + 1 tsp cocoa powder
2 tbsp bourbon
1 tbsp water
1 tbsp + 1 tsp honey
powdered sugar, turbinado sugar, or crushed wafers for rolling
In a small bowl, stir together the bourbon, water, and honey.
In a bigger mixing bowl, whisk together the wafers, pistachio meal, cocoa powder and powdered sugar.
Stir the wet ingredients into the dry ingredients make sure everything is well combined and sticky.
Roll about a tbsp of the dough into balls with your hands, then roll in extra powdered sugar, more crushed wafers, or turbinado sugar until coated.
Allow to set up in the fridge for at least 10-15 minutes before serving (to help them keep their round shape and to firm up slightly).
