We over half way through Cookiemas 2017 and I figured what better way to show my love and appreciation for cookies than with some safe-to-eat cookie dough! Now I am DEFINITELY not saying don't eat cookie dough with eggs in it... cuz lessbehonest I do that all the time... but if it gives you the heebie jeebies to think about eating raw egg, or you have little kiddos and just want to err on the safe side, then this is the recipe for you.
I probably shouldn't admit this, but sometimes I think the dough is better than the baked result. There is something about the crunch of uncooked sugar and the bite of the raw dough that I find so appealing. I know I am not alone because there are actually scoop shops where you can your raw cookie dough customized and filling a waffle cone to the absolute brim. That may be a touch too much dough for me (maybe), but I like where their heads are at.
I think the whole family will like this one. And because there is no baking it is a snap to make and the perfect thing for when you are craving just a scoop of something sweet, but it's too cold out for ice cream. OR if you are more ambitious than I am, this is the perfect cookie dough for some homemade chocolate chip cookie dough ice cream.
The Recipe: Edible Chocolate Chip Cookie Dough
yield ~ 12-14 dough balls
The Bits and Bobs:
1 cup unsalted butter, room temp (2 sticks)
1 tsp salt
3/4 cup sugar
3/4 cup brown sugar
1/4 cup unsweetened applesauce
2 tsp vanilla
2 cups all purpose flour
1 1/2 cups mini chocolate chips
In a large mixing bowl, cream together the butter, both sugars, salt, and applesauce. The mix should be light in color and fluffy. Add in the vanilla and mix until combined. Add in the flour and and beat until almost completely mixed in, then add the chocolate chips and mix for a minute longer until the flour is incorporated and the chocolate is evenly disbursed.
Scoop out a tablespoon or so and serve!
