If you have been reading my blog since its inception last year, you know that I am not a big fan of the pumpkin spice craze. First of all, it comes too soon with every subsequent year beating out the one before for its launch date. Secondly, some of these companies have taken it too far... pumpkin spice candles, pumpkin spice beers, pumpkin spice toothpaste? (yeah that's a real thing). And lastly, I just find everything in the PS family to be overly sweet, and that kind of dessert cop-out doesn't fly with me. Sorry, not sorry ::cue Demi Lovato::
HOWEVER, in the realm of getting into the festive Fall spirit, and admitting pumpkin serves a great purpose in the culinary world, I present something pumpkin flavored. Not pumpkin spice, let's just make that clear distinction.
This is a quick gluten free, dairy free, low sugar, paleo optioned breakfast that is sure to satisfy any Fall lover's craving while also keeping the Summer season lingering in our minds with a slight tropical flavor thanks to our good friend, Mango. Give this a whirl (food pun... 'cuz you need a blender...no? fine.) and let me know what you think. I may or may not (I do) have some other pumpkin recipes in the hopper that involve little to no (no) pumpkin spice.
Also!! You will see in the pics that I topped this bowl with some granola. I posted the recipe for this super easy gluten free granola on my Instagram only so you should definitely follow me (@bellylaughsblog)... just sayin'
The Recipe: Pumpkin Mango Smoothie Bowl
~yields 1 smoothie bowl
The Bits and Bobs:
1/2 cup mango juice (not cocktail) or coconut water* paleo option
1/2 cup non-dairy, unsweetened yogurt (I used daiya)
2 tbsp unsweetened pumpkin puree (canned is fine)
1/2 cup fresh or frozen mango chunks (if using fresh add a little more ice)
1 tsp honey* use raw if paleo (or none)
4 ice cubes
Dump all of the ingredients into a blender and blend until smooth. Pour into a bowl and top with fresh fruit (more mango, banana, raspberries, blueberries all great accompaniments), granola (check my Instagram for the easiest granola you will ever make), unsweetened coconut flakes, and/or chopped nuts of your choice (personally recommend almonds or macadamias for this smoothie in particular).
