Growing up I was a very picky eater. I am sure all of you mothers reading this are nodding your heads, thinking of picky eaters in your house because someone just would not give peas a chance. Peas were my arch nemesis. The bane of my existence. We are talking uber-dramatic gags when I put one tiny pea in my mouth. I was weird… and loved attention… middle child.Read More
Two major life events happened last weekend… No, Brian and I didn’t buy a car together (that would have been MAJOR), and no, there is still no puppy (sorry Mom). I did, however, run my first ever full marathon on Sunday. Then on Monday I decided it would be ok if I turned the big 3-0!Read More
I loved culinary school. Not only did I get to play with some top-notch ingredients every day, but I was also learning so much about a subject I couldn’t get enough of. Even in the most frustrating moments, like my icing not being even enough, or my buttercream roses continuously looking like tiny cabbages, I was smitten. I always say, if I could just go to culinary school for the rest of my life (without the tuition cost of course), I would be the happiest camper that ever lived. Truthfully.
My favorite class was Candy, where we played with chocolates, brittles, and gold flake. We got to pull and blow sugar into whimsical shapes and create showpieces in bright, edible hues. The instructors were amazingly odd and mad scientist-like.
My least favorite class… Bread.Read More
Surprise! It’s Valentine’s Day again! Usually V-Day for me plays out in one of the following ways:
“Who needs a man when you have awesome girlfriends? Girls Night!”
“PRESSURE!! Must. Be. Romantic. Wonder what he is planning?”
“Eh, how about I cook, and you can do the dishes… just like most other nights, but sexier ‘cus it’s Valentine’s Day.” (that part sounds very Jessica Rabbit-y in my head)
I can always try to pretend like I forgot it’s coming, but I usually cannot stop myself from daydreaming of all the romantic possibilities the day may bring. Flowers? A candlelit bubble bath drawn just for moi? What’s that… a PUPPY?!? Even with all these whimsical fantasies, I like to think I am pretty easy in wooing department… Feed me. Then roll me home. Swoon!Read More
Fat Tuesday, Mardi Gras, Carnivale... Tuesday, February 9th, 2016. Growing up, the day before Ash Wednesday, or the start of the Lent Season, was the last day to completely stuff your face before you were to give up a guilty pleasure of your choosing until Easter Sunday.
Every year I swore I would give up dessert... HA! I crack myself up. I was not self-aware enough as a young whipper-snapper to know this is a virtually impossible feat for me. As an adult I have tried, way too many, "cleanses" to help me quit my sugar addiction. The cleanse usually goes great for a three days (definitely being generous to myself there), then I binge eat dessert-y items for a full three-meal day.
My name is Katie and I am a dessert addict.Read More
Food makes me happy. Desserts make me giggle with glee. Sharing memories over a meal are, by far, my most satisfying moments. Like me, I am sure most people can recall a moment of comfort in that first bite of a fresh-out-of-the-oven chocolate chip cookie; of feeling victory in convincing your "stuffed" dining partner to try your dessert; and of warmth and connection whenever laughter erupts during dinner table stories.
Belly Laughs is my attempt to extend the reach of those shared moments. Through original recipes, familiar tastes, and funny life stories, my hope is that Belly Laughs becomes the first blog you think of when you are looking to make your belly full.
I will be sharing inspired and family recipes, my tips/tricks/hacks to mastering culinary techniques, and stories told of the happy places I venture to eat which motivate my own kitchen recreations. More important than anything I have to say, I beg you to share your own stories and favorite places, culinary inspirations and aspirations, and ANY requests for what you would like to see on the blog. Remember also, to subscribe to the blog below. Posts updated weekly. Happy eating!Read More
