~yields 4 pieces of toast
The Bits and Bobs:
1/2 ripe avocado, sliced
2 hard boiled eggs (see below for the perfect egg)
2 slices of whole wheat, sturdy bread, toasted to desired crispness
hot sauce (optional)
Hard boil two eggs: in a pot, cover two eggs with cold water. Bring to boil over medium high heat. Once at a boil, remove from heat and cover tightly. Set the timer for 8 minutes and allow the eggs to continue to cook in the water. After 8 minutes drain the hot water and rinse with cold water before peeling.
Toast two pieces of bread to desired doneness. Scoop out half a ripe avocado and cut into cubed pieces. Peel and cut each egg into thin slices. Once toast is done, smash the avocado cubes onto each piece of bread leaving slightly chunky. Layer one sliced egg on each piece of toast and sprinkle with sea salt. Optional hot sauce drizzle to add extra depth of flavor and a little kick of spice. Serve immediately!
