The Bits and Bobs:
3 whole ripe bananas, mashed (optional one additional whole banana for top)
1/2 cup almond butter
1/4 cup coconut oil, melted
1 tsp vanilla extract
1/2 cup almond flour
1/2 cup coconut flour
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
1/2 cup macadamia nuts, chopped
Preheat the oven to 350*F and grease a 9x5inch loaf plan.
In a large bowl, mash up the super ripe bananas. Add the eggs, almond butter, coconut oil, and vanilla. Whisk together or use a mixer to fully incorporate all the wet ingredients.
Add both flours, salt, baking soda, and cinnamon to the wet ingredients. Mix until incorporated then fold in the nuts.
Pour the batter into the prepared pan. If using the additional banana on top, slice lengthwise and press into the top of the batter cut-side up. Bake in preheated oven for 50-60 minutes or until a toothpick inserted in the center comes out clean. Allow to cool for five or so minutes int he pan, then remove and allow to finish cooling on a rack (helps to avoid the soggy bottom on the pan)
